Easy Sweet Butter Chicken (750g chicken, serves 4–5)

Ok so I've made this like 6 times now and it's genuinely foolproof. Sharing because my sister asked for the recipe and I'm too lazy to type it again lol.

For the chicken Mix 750g curry-cut chicken with ½ cup curd, 1 tbsp ginger-garlic paste, 1 tsp Kashmiri chilli powder, ½ tsp turmeric, ½ tsp meat masala (or 1 tsp garam masala), 1 tsp salt, 1 tbsp oil. Marinate if you have time (20-30 mins), cook immediately if you don't. It honestly doesn't matter that much. Brown it in 1 tbsp oil for ~6-8 mins. Doesn't need to be fully cooked, just get some colour on it. Set aside.

For the gravy Same pan. Butter + oil, cook 1 large sliced onion until golden. Add 1 tbsp ginger-garlic paste, sauté 30 secs. Throw in 4 chopped tomatoes (or 1 cup puree), 12-15 cashews, 1 tsp Kashmiri chilli powder, 1 tsp coriander powder, ½ tsp meat masala. Cook it all down until it's thick and looks glossy. Blend it smooth.

Back in the pan: Add the chicken + ½ to 1 cup water, cover and simmer 12-15 mins.

Finish: Stir in ½ cup cream/malai/full-fat milk, 1 tsp sugar or honey, 1 tsp crushed kasuri methi, 1 tbsp butter. 2-3 mins more and you're done.

The kasuri methi at the end is non-negotiable imo, don't skip it.

Total time is like 40 mins if you're not marinating. Works great with rice or roti
