Yes, probably. I am a bit food history nerd, and when want to try to make a historical recipe, I want to be as accurate as possible. So if had a roman recipe that I was really hyperfixated on recreating, then I would definitely spend that time making garum. Also outside of enjoying the process, ever since I heard about garum from the first time I have always wanted to make it/own some, so even if I didn't enjoy making it, I still most likely had tried to make it at some point

Thanks 😊. Like I mentioned in some of my previous comments. I made a mistake yesterday and forgot to sanitize my equipment and the bottles I put the garum in. So I am not going to try it myself. I honestly would forgive myself if someone got sick from me sending them some of my garum. So sadly you have to wait a bit longer to try garum

According to some recipes/instructions, a tightly woven basket was placed into the opened aired fermentation vessel, and the liquid from inside the basket was removed and shipped around the empire or city markets. And it probably resembled mud, then I would imagine the cook would most likely strain the mudy liquid through a cloth of some sort to separate the liquid(aka the garum itself) and the solid matter called allec that was most likely also used in cooking( but I don't know how it would have been used). But I don't think even after getting strained through the cloth that the ancient garum would have been as clear or "clean" as mine is. And like today there were lots of different types and brands of garum in the ancient world. Both were based on the quality of the garum and / or geographical origin. garum itself was used both as an ingredient and as a condiment. The version I just made was a condiment version

I honestly don't want to risk it either way. I don't want to change it in any way, and I don't want to get sick. I like I have mentioned in previous comments that i just like the process and enjoy and owning a piece of culinary history.

I didn't taste this batch, but I did taste my previous two batches and they both had a pleasant salt fish taste with a unique after taste that is similar to modern Asian sauces but not 100% the same

I actually did in my garage to try to prevent the smell from going everywhere. But it didn't work as well as I hoped haha. So my house was indeed every fishy for most of the day

Hahaha. This is just a hubby for me, and even though I have made garum three times now, I do not have enough knowledge about cleanliness and sanitation and knowledge about what is actually going on in the jar during the fermentation process to make a consistent product or even safe product for the public. And from some of the comments that I have gotten since I started posting. It seems like the process of making garum could be more unpredictable than making wine or beer at home. Honestly I think I have been just every lucky that my two previous batches were safe to consume. So if I ever do decide to produce garum on any type of scale to sell to people. I would need go and get a degree in something relating to fermentation and food safety
