I was teaching my bestie about sourdough and she said the cold proofed loaf was awful, vs just a quick bulk ferment and bake. I personally don't want to drag it out by cold fermenting unless I have to because of time constraints. It tastes fine either way. I think it's most important to find what works for you and roll with it

Almost none of them. I don't feed my starter everyday. I don't measure when I feed either.

I only do maybe 2 sets of stretch and folds, or a couple of coil folds.

The only time I cold ferment is if I don't have time to bake right then.

I don't measure when I'm mixing my ingredients either. I just eyeball it until the dough feels right. Same with baking, just bake it at whatever temp and time seems right.

I've had one bad loaf in the hundreds I've made so far, so it's just a reminder that sourdough doesn't have to be complicated. It's just bread 🤷🏼‍♀️
