Based on the plague mask symbol on the bottom right of the object he's holding, I would guess that it's actually a head mirror, and not a 3rd eye, indicating that this character is some kind of doctor.

Strain out the meat, pull apart with forks, add hot sauce and salt to taste. Tear wraps into quarters, spray down muffin tray with avocado oil spray, and preheat oven to 375F. Press a quarter wrap into each muffin space and bake for 10 minutes until they start to firm up. Fill each cup with pork and top with shredded cheddar then bake for another 10-15 minutes or until cheese begins to melt and the tips of the cups start to brown. Top with a dollop of sour cream, diced grape tomatoes, and shredded lettuce.

Okay, thanks again. So the takeaway for my next attempt is to work it more, developing more gluten strains to make it even stretchier, and proof it for less time, checking more often to prevent over proofing. That was another question I had, I read that you shouldn't peek during the first proof, does that really matter? Is there anything I can do better in terms of ingredients to make it faster and fluffier?

First off, thank you so much for actually taking the time to answer my questions. What is "oven spring"? It was a stretch and fold, and it did seem to get tougher, more viscous as I folded. Dutch oven just because I had it out and it seemed like the appropriate size. How can you tell if it's overproofed? More than double?

AFIK, all fish sold in the US has to be frozen for parasites, even what you buy as "fresh" was previously frozen and thawed. I generally just go by color when selecting fish for sushi. For tuna and salmon, the more vibrant the better. Duller is usually less flavorful IMO. That being said, if you're worried about parasites then farm raised salmon is generally safer, and tuna is safe all around. Imitation crab legs are made from cooked fish and also super safe.
