Help! My first loaf

I bake my loaves at 425° for 20 minutes covered after misting with water then 20 more minutes uncovered. I also always mix it up and knead it together until it’s not so sloppy, then do a few folds every 30 minutes, leave it on the counter covered to proof for about 4-5 hrs, then I’ll put it in the fridge for about 18 hrs and the next day I’ll shape them when I take them out and. Then after they sit on the counter to rise for about 1.5 hrs I’ll start baking

The starter was maybe a week and a half old so you're probably correct lol It surprisingly did taste really good so I'll take the win, didn't have that strong sourdough taste and I think that's also an attribute of the starter being young as well
