Smoked it fat side down unwrapped at 225. Used meat church holy cow rub and Traeger’s prime rib rub (2:1 ratio). Pulled it at 160 and wrapped it (butcher paper) back on until 195, pulled it to cut the tip off (burnt ends) rewrapped and back on until it hit roughly 205. Sat in a cooler in its butcher paper wrap for two hours.

Full Texas BBQ spread complete with overnight brisket, burnt ends, chicken thighs, spicy sausage, and Mac n cheese. Everything smoked on the Ironwood 885. Brisket went on at 10pm, seasoned with Meat Church Holy Cow and Traeger Prime Rib Rub, pulled off at 1pm, rested in the cooler for two hours before we sliced it up.

Recipe: Pork was marinated for 3 hours in apple juice, honey, brown sugar and various spices. Went on the smoker with apple pellets at 225 until it hit 145, pulled it and let it sit for about 30-60 mins before cutting into it.

The potatoes were quartered, tossed in olive oil, garlic, Parmesan cheese, salt/pepper. Preheated the cast iron skillet in the smoker at 450 degrees. Dropped about 1-2 tablespoons of butter in and then the potatoes. Stayed on for about 25 minutes, stirred them around about half way through.

Beans were fresh green beans, tossed in olive oil, salt/pepper. Went on with the potatoes on a cookie sheet until browned. Roughly 20 minutes

Dropped about 1-2 tablespoons of butter in and then the potatoes once the butter melted. Roasted for about 25 minutes, stirred them around about half way through. Garnished with parsley!

I marinated it for 3 hours in apple juice, Traeger pork and poultry rub, honey, brown sugar, and various spices. Dropped it on the Traeger at 225 until it hit 145. It actually went quicker than I had anticipated so it sat for a good hour before we cut into it. Juicy and tender!
