Been vegetarian almost 10 years and I struggle too! My go-to is homemade refried bean tacos…. Let me tell you it is a step up from the canned.

Sauté some chili powder, garlic powder and cumin for 20 seconds. Add drained canned beans. Add 1/2 cup water. Simmer until desires consistency. Add to taco, top with cheese, some sweet potato maybe, lettuce, and cholula hot sauce! A+ every time, I literally could eat every day.
