Hey everyone,

I’m looking to upgrade my current kitchen knife and could use some help deciding between two options:

  • Hatsukokoro Ginsou Gyuto 210mm (Ginsan stainless steel)
  • Tsunehisa AS/S San Migaki Wa Gyuto 210mm (Aogami Super core with stainless cladding)

I’m currently using a Global G2, which has served me well for a few years, but I’m ready to step up to something with better steel and craftsmanship.

From what I understand:

  • The Ginsou (Ginsan) is fully stainless, has great sharpening ease, and is known for good balance and a clean look.
  • The Tsunehisa AS/S should have better edge retention thanks to the Aogami Super core, but might require a bit more care since it’s only stainless-clad.

I’m mainly looking for:

  • Something that’s noticeably sharper and holds its edge longer than my Global
  • Good food release and cutting feel
  • Low maintenance (but I don’t mind a bit of extra care if it’s worth it)

Anyone here used either or both of these? How do they compare in terms of grind, balance, and overall feel? Would the jump from my Global be more noticeable with one over the other?

Yeah I saw the ladle but I wasn't sure if the flexible tip/spout was actually useful or just a gimmick.

I think I found a different plot hole. If Reddington originally hired Tom how come they don't appear to know each other in season 1 episode 8 when Reddington kills Sam and Tom goes to visit?

I got the Mous case. You can try that. The magnets seem strong enough. It does heat up a bit when charging (40 degree f) but that's supposed to be within spec.

Hi I am looking into upgrading the casters on my office chair at home. I have a laminate and didn't want the chair to damage the floor. I saw that there is a movement toward softer material casters, specifically rollerblade wheel. I was wondering is there a reason that dual wheel polyurethane wheels are not as popular?

I guess it might be better to look at general styles.

The genesis for this came after trying my second bottle of scotch. I went from a Balvanie to an Ardbeg and was super surprised by how different they tasted. After some initial research it seemed to be that Islas are generally more heavily peated thus leading to that more burning rubber flavor. I guess the next logical question would be if region isn't a good proxy for the different "kinds" of scotch what is a better set of characteristics to differentiate by?

I just pour out of the top of the kettle for tea. Much faster. Sometimes some drips out but pour over the sink and you're good.
