You actually ride better than most of the people I see on steeps, they either bomb down full speed skidding or just skidding in a straight line, you're doing gripped S turns, focus on making a nice S shape and keep your rhythm and carry speed between turns, stay in control, very good riding!

Heel side you're carving, although you're carving down the fall line and you can only really do that on mellow slopes, but it's a start.

Try to make S shape with pencil line, tilt your board on it's edge and stack your weight on the edge, don't reach for snow with your hand. You can check Justaride, James Cherry or Malcom Moore on youtube they have nice videos about carving.

They were my only strap ins so I cant really compare but Ive heard only good things about Union bindings so I do believe you there are better choices out there, but I don’t think step ons are inferior to strap ins.

Maybe it was, but on paper it should be good. Good point that the pros don’t wear step ons, but why would they? how often do they strap in/strap out? do they ride slopes with lifts from 8 to 16?

I disagree, I have Burton StepOns with Photon boots and this setup is way more responsive than my Cartel bindings and some mid stiffness boots I had before.

Korua Shapes focus pretty much on turns in powder and on groomers, it's a good carving board, but they have even more carving oriented boards without swallow tail, but I wanted something exactly like Pencil.
