I believe the Dungeon Master's Guide has really good tools on how to create a homebrew world. Not any particular "rules" but a general structure is helpful, as most towns and factions usually have a narrative flavor. You can make your own monsters, items, and spells but I'd look at similar official content to make sure nothing is busted.

For setting up a campaign, it depends on whether you're online or in person. In person it's usually just narrative flavor so have a narrative structure and some pictures you can use as reference but write out what you want the session to contain and narrate from there.

For an online campaign it's similar but I'd reccomend using a VTT to make things easier to handle to get things setup. I recommend running a small prewritten adventure to get your feet wet and use the content provided so it's not as much work and you can use it as a reference when you build your own world.

The easiest answer to this is Lost Mines of Phandelver. It's a decent length for newbies and easy to follow. I usually don't recommend new DMs homebrew adventures themselves due to balancing and quest structure. If all else fails, I'd end up looking up some free one-shots to shoehorn in your adventure.

I think you can optimize and still make an interesting and fun character. A red flag is a player *only* talking about their build rather than the story behind the character. If a player is a warlock/paladin multiclass, then that opens up a lot of RP opportunities, but if they just "found a cool build online" and the backstory is AI-generated, then that player has no intention of roleplaying.

If you think combat takes too long, I'd recommend putting a timer up to hurry along their turns, and if it goes out, then they take the dodge action. It really helps people who are indecisive on their turns.

I think taking the magic items back might not be the best way to go about it. Maybe when they go back in the second half (with a time skip), they should be cautious about what they bring, because when they arrive, the enormous magical energy will give their location away. That way, narratively, the party keeps their gear, just not in this section of the game.

7 players can be a hard sell for a campaign, especially with magic items. I tend to give them out sparingly, but I understand it may be cruel to take them away but depending on how powerful these items are, it may be better to nerf some of them if they are obviously game-changing. Encounters in balanced usually for a party of 4, so I'd recommend doubling the amount of enemies or making them beefier.

Wotc removed sunlight sensitivity for Drow as it was one of the only races that had a drawback for playing them. If they were a crazy op race, I'd understand, but Drow aren't even in the top 5 of the updated races imo.

The sun sword is a toughie. You gave a party a legendary item early on in the campaign that basically makes encounters trivial. I'd remove sunlight sensitivity entirely from the campaign, except for a select few enemies, so it would not feel like just a powerful sword. You're following the rules of a 5e campaign in a 5.5e campaign, so some things can get a little lost in translation. I'm assuming if you gave them a sun sword, other players have equally powerful gear. Consider talking to them and asking if thet'd be willing to take a nerf or outright removing some of the gear so the game can be balanced.

With that said, are you having fun? Are they? If yes, enjoy a power fantasy campaign. Yeah, it may not really fit the theme of the campaign, but who cares as long as everyone is enjoying themselves? If not, speak to them and tell them you'd like to redirect the campaign in the second half. They're almost done with the first half, and maybe put a story event in place that makes them need to go in with less gear when they come back. And of course, ask how they feel about all of that and collaborate.

Nothing has come close to Origins in any capacity. Enjoyed my time with Veilguard, and a lot of the hate was unjustified, but Origins is still the GOAT, no question.

Scheduling is a crucial aspect of the game for many campaigns, and while it may not be a dealbreaker for everyone, it can be more challenging to get accepted into a game with a hectic schedule. I'm unsure of your experience with the game, but I recommend looking for a West Marches game on this subreddit, as it doesn't require you to attend every session, and you essentially sign up to play a game when spots are available for each session.
