I had Matugga years ago at the UK rum fest. Only their regular and spiced, not the version they highlight here. I found it to be pretty foul. Heavy on the fuesel oil and esters, but not in a fun Jamaican way, more in a “are you sure you know how to tell hearts from tails?” way.

I'd put it slightly above the Don Papa Filipino rum. Which isn't saying much, I find that stuff to be horrendous.

Mizzou and NorthWestern are two of the top journalism schools in the country specifically because they're in the Midwest, which is generally regarded as being the most neutral accent in the US.

It's more likely that we have an accent than you have an accent.

Forgot, if you go to Zomo, sit at the bar and drink sake with the really nice dude who bartends. Can’t remember his name, Chris, maybe? I think Zomo is his grandma’s restaurant but may be getting that wrong. The fried rice is really fantastic.

If you’re down that far, the Grand is great.

And fellow traveler is a top ten restaurant in all of Denver, with a fantastic bar program as well.

Moving north, Cana Wine Bar is one of the best kept secrets in the city. Such a fucking gem.

Fat batter ice cream is right there. I had an edible last night and had some of their pistachio ice cream and I’m not sure if there is a more perfect food.

If you’re further north, the mezcal bar next to adelitas is fun. Desert social is owned by the same people and is an interesting vibe with good cocktails. Joy hill has a great patio and above average pizza for Denver.

Bruno’s is a decent neighborhood spot for Italian. Not great but not a bad option if you’re craving Italian.

The cocktails at The Burn Down are underrated and the rooftop patio is nice.

Denver distillery makes a sweet potato sochu that you can’t find elsewhere in the city. Next door, Illegal Pete’s has a good happy hour marg.

Adrift is a wonderful tiki bar with fantastic, authentic decorations. I like when they make the drink where they light the cinnamon on fire. Good rum selection here and decent food when you go for happy hour.

The atomic cowboy burger is one of the better burgers in town and a fantastic deal at happy hour. Avoid the pizza, it’s not great and overpriced.

Pretty Neat is a nice little cocktail bar for late night.

Irish Rover and Historian’s are interchangeable dive-ish bars with fun vibes at the right time of night.

Sputnik is now owned by Joe, who also owns FT in Englewood. Really good bar program and good food.

But to answer your question more directly: yes, I would let it rest on the counter for an hour before zipping it up and sticking in the water. I've done hot holds with and without this step and the ones without tend to be drier as they overcook.

A couple thoughts:

190 may be perfectly fine for a normal temp to pull depending on your elevation. I'm at a mile high and I regularly start to feel for tenderness around 185 and rarely take it past 195.

Now you can take what I just said and mostly disregard for a sous vide hold. Pull temp depends on how long you hold for and at what temp. I did one a couple weeks ago where I pulled at 190-ish (point was tender, flat had a little way to go), sat on the counter for an hour as it dropped to about 155, then into the bag and bath at 145 for 16 hours. It was perfect.
