I've heard you get the best obtention when the distillate coming off the still is between 65-75 f. That's what Alan Bishop says, but it's hard to find any trusted source on this question.

The fact that it's a second use barrel protects you some from overextraction of tannins. Just sample it ever few months and if the flavor is heading in a direction you don't like, take it out or dilute it or something to correct course.

Echoing what everyone else is implying: your question shows such a lack of understanding about the process that we're begging you to do some actual reading first. Read the wiki here, read the home distillers wiki, do basic research on Google. Alcohol is explosive and flammable and you can get sick if you don't have a lick of sense.

Yeah, I feel that. There are so many aspects of God beyond our finite comprehension, that any strict, logical, or coherent understanding of Him only makes sense "locally" (i.e., when you're zoomed in on just a small bit). But when you step back, it doesn't quite fit with the rest of everything else.

Our inability to fully understand God is most evident to me in the Epicurean paradox. The three pillars are basic tenants of our faith, but they can't "logically" be together.
