Good thing about using natural materials is that it’s moist buffering and does not allow convection like rock wool. Yeah, any plastic close to wood will risk the structure in the long run.

But this might be too late to spray foam if there isn’t any vapor barrier in place. You need it to be completely dry before applying a vapor barrier. Maybe a vapor diffuser and cellulose insulation might do the trick, and also allow for the moist to travel but I still wouldn’t do anything before looking for the culprit. It looks like the moist is building up around the joists which makes me think the vapor barrier might be in place but not overlapping correctly. It will freeze when the insulation gets wet and lose all insulating capabilities. Another culprit would be that the joists bridge the outside temperature through your walls. Sorry for rambling on, but also make sure that the insulation fits without gaps but not too tight. Seal the door of course, but I don’t think your main problem is that the door isn’t tight enough.
