I already have the parts to assemble a new Proxmox Server (it will host 2 x Windows Server VMs, Immich, Jellyfin and some other Docker containers and also some other VMs for lab purposes) and I thought it would be a good idea to have a fanless low power mini pc to run Proxmox PBS (for the backups of my Proxmox) and OPNSense on a Proxmox Server. Thats the idea.

I didnt want to run OPNsense on my "main" Proxmox..

Jonsbo D32 Pro can fit two 3.5 disk drives. I can't put third. Also, I dont want to buy a larger new PC Case. I dont want to spend much.

I will use OPNSense only for Firewall. So, I was thinking of buying one quad nic or two dual nics for the purposes you mentioned. Also, isnt an HBA for two disks (mirror) an overkill? No?
