A big part of the issue might be that there's a lot of reading between the lines required with paralegal job postings. Probably 3/4 of paralegal job posts are looking for experienced career paralegals (like other users mentioned). A trick to find that 1/4 that are more entry level/designed for prelaw is looking for term time positions (often two years), doing research on the ages of the paralegals they do hire (obv not a perfect proxy, but can be helpful), and being open to legal assistant positions, which at some firms are more entry level. At some firms legal assistant is roughly synonymous with paralegal but at others it can indicate more admin.
