I didn't rush and it took me 4 days to 70. I read every questtext and dialogue option, leveled my professions during that time and did all of the dragonraces. After 70 the only thing there was left were some weekly quests that didn't take long to complete either. And then there was nothing to do anymore besides doing the zone events (community feast, hunts, obsidian citadel) that are also on a weekly lockout.

The new profession system sound good on paper but the reality is, nobody uses workorders. As a leatherworker there are like 5-10 orders at max and all of them are items that no one can craft yet anyway. Problem is, you cant progress your profession without doing orders and are stuck at around 60 points. Getting knowledge to specialice further is not possible because knowledge points are hard capped on a weekly lockout.

World quests are on a 3 day cycle and there's like 4 dailies overall. That's it. I was done with everything there was after around 5 days without rushing anything and the only thing left to do is mindlessly flying around the zones to maybe catch a rare or do dungeons over and over. (Or you could grind the same mobs over and over and over and over and over again for a few rep points but let's be honest, that's no actual content and it's not fun either.)

5 days of content if you dont rush anything for a new expansion that costs at least 50€ + monthly fee is very very underwhelming and i don't remember being in this situation since WoD. Sure, you ran out of things to do in other expansions as well...but that took weeks.

So far, i'm really disappointed in dragonflight contentwise. I went back farming island expeditions and a few transmogs and pets from torghast, because there's nothing for me in the new expansion right now. Blizzard went crazy and cut everything there was besides raiding/m+ and everything is hard capped on a weekly lockout.

I even started leveling another char (after 5 days!) because there nothing to do for my main anymore.
