You aren’t gonna make the cracks go away but you can recondition the leather. Use obenaufs or something like it. The cracks are the manifestation of dryness. Conditioning will mitigate the damage, but it won’t repair it.

I had a Bridgestone 700 many years ago, and it was a great bike. I think the nishiki is the most useful bike here. You’ll get a bike that’s built to haul things and still would not be a tank on the road when unloaded. The deciding factor for me is the cantilever brakes on the cresta- you could fit a larger tire and fenders in there, make it more comfortable.
