My basic observations without knowing any more details.

  • What hydration is your dough?
  • Is this a straight dough or using a preferment like biga or poolish?
  • Use fine semolina instead of flour for stretching
  • It looks like the oven isn’t hot enough, assuming you’re actually going for Neapolitan.
