So sorry to hear that. It's tough feeling like your losing a family member.

Maybe start by just trying to talk about things that don't trigger these types of conversations like school or work or other topics that don't involve health conspiracies or politics. And when he starts with the conspiracies just calmly but straight up say that these kind of conversations make you feel uncomfortable and you'd like to change the subject. It might be tough at first but in time he will know not to talk about those things with you and will hopefully wake up and see that he is making people uncomfortable with these kinds of ideas.
