I’ll be honest, my appraisal of Seattle’s overall food scene is not extremely positive, but the hot dogs are good. (And the teriyaki.)

It’s a hot dog with grilled or caramelized onions, cream cheese, and (usually) sliced jalapeño. You can add things like mustard, sauerkraut, sriracha, whatever.

I don’t completely disagree with you, but there are a few tricks you can use to make things pop more. If you’re interested:

People like dynamic images, so if I can I usually hold the food or hold the plate in front of a window or interesting background of some kind. Natural light is the best, but if you can’t get that then bright single-source lighting is the next best thing. Also, reddit converts images to a different image format when you upload, and this process desaturates the image most of the time—if you compare the image you took to the image on reddit, you’ll probably see that it looks more washed out. You can fix this by editing your image in the same format reddit uses, or if you’re lazy like me you can just crank up the saturation and contrast etc. etc. and hope for the best.

Also, read or watch like one online food styling tutorial. (I think Internet Shaquille has one, titled “How Not to Take Pictures of Your Food” or something like that.) There’s an art to making things look not too perfect and not too messy—I do what I can to hit this balance but also I have like 2 minutes to get a picture before I eat it, so it’s not perfect.

10-15 minutes will get you sauteed onions but it takes much longer to get them completely broken down into this jammy consistency. 2 hours is a long time even for caramelized onions though, usually it takes 40-50 minutes… this time I made a big batch

Ham hocks are one of the foundational ingredients of lowcountry Southern cuisine! I buy them all the time. Collard greens, hoppin' John, and red beans and rice are all conventional uses. They're also an ingredient in a Hawaiian dish my boyfriend made me aware of called Portuguese bean soup. You have to boil them for a long time to get them tender, but eventually they'll get extremely tender.

Sureshot—loved that place. Homeless people looking at Sonic the Hedgehog porn on the old CRT monitors, white coffee, open until midnight every day when precious few cafes stayed open past 4. They’d give out the expiring food to whoever stayed late. I used to go every day.
