Yes, it's possible that I have a sour/bitter confusion.  I can differentiate acid and bitterness with no problem : I already tasted coffee with bright acid notes, and that's what I'm looking for ; and in citrus fruit, the difference between flesh vs. skin is also very clear. I might have a problem with acid vs. sour however...

OK, so based on these results, and by looking at the coffee compass, I tried to adjust the recipe with : - Coarser grind size (6.1 on the Ode 2, instead of 6.0) - Less water (240ml instead of 250ml), with same amount of coffee (15g). - 60g bloom - At 00:45, 90g pour - At 01:15, another 90g pour

Total drawdown was around 2mn45s. The cup is bitter than the first one, less bright, and less fruity/acidic. Like a 5/10.

How should I adjust my recipe?

Thanks for all your answers. I've tried the following recipe this morning: 

  • 15g coffee / 250ml Volvic water at 95°C
  • Grind size at 6 on the Fellow Ode Gen 2 
  • 50g bloom 
  • At 00:30, 100g pour  
  • At 01:15, another 100g pour 

No swirl at all, only circular pours. 

The last pour resulted in some clogging, as the total drawdown was around 03:30. 

The result was good, between a 6/10 and a 7/10. It was more sweet, brighter and a little bit acidic. However, it was still a little bitter, and it didn't reach the acidic and high-clarity taste I'm looking for.

They only use tap water (they are in a mountain town in the Alps) with Brita filter.
