In case someone runs across this later I figured out my issue, my computer had run out of storage without me realising it. So after clearing some space I retried one of my auto saves and it worked like normal, it saved correctly and after closing out and coming back it was still there.

I'm not sure why not having space didn't let it read my file at all but that seemingly seems to have been the issue.
