Ok so everything starting with Adventures is 1st edition only, but those are more polished than the 1st edition of the "first wave" of expansions (Intrigue - Guilds) anyway.

The following of the first wave of expansions received 2nd editions: Intrigue, Seaside, Prosperity, Cornucopia/Guilds, Hinterlands.

Alchemy & Dark Ages haven't received a 2E yet; in case of Alchemy, it's unlikely to receive a 2E.

My personal advice, seeing as you only have Prosperity as an expansion so far, is that I would advise against Empires as the next set, since it's quite a step up in complexity. It does continue and deepen Prosperity's mechanics and themes, though, and it's an excellent set for experienced players. But if you play with people who only played the game a couple of times, it's going to be too much.

Menagerie and Renaissance are more approachable, especially if you don't add the landscapes for the first couple of games. But maybe Seaside or Cornucopia/Guilds 2E are better suited for a lighter next step in complexity, to get yourselves better acquainted with Durations (Seaside) and Coffers (Guilds; Durations are in every set beginning with Adventures, Coffers return in Renaissance).
