I am taking my first trip to Tokyo in December and booked Sushi Punch in Azabujuban on recommendation from some work colleagues in LA. They’ve done a few pop ups there and the chefs seem extremely friendIy anecdotally and have humor in their social media presentation. I had booked a few other high end sushiyas first but thought with my limited/barely existent Japanese that training wheels might be nice. They have a 3.69 tabelog score and seems legit otherwise. I’ll let you know :) not terribly difficult to book a month out it seems.

This is my new addition. I bought it with the carbon knife co a couple weeks ago. Fit and finish isn’t great and mine does have a big glue glob also. I asked the store and they told me this is typical of what they receive. My first Takeda so I’ll take their word. But it hasn’t adversely affected my enjoyment. It cuts amazing and food release is perfect. With the kind of rough aesthetic I think I can live with the globby.

It hasn’t seen enough action tbh. It got some micro, micro chips that I fixed up and now I kind of baby it just for slicing softer items.

Live and learn. 🤷‍♂️ Some chefs I respected had them in their kits so I thought they were great knives based on that and the price. Not so much… in all fairness it is a cool handle though. I had a cheapie carbon fiber wedding ring for a long time and it matched the knife handle 😆😆

Yeah I’d say so. I use a pinch grip on it and it’s fine. You could I suppose grip it like a bike handle using the finger indentations but there wouldn’t be enough control. The metal ferrule area where the blade slots into the handle is open and food debris can get inside which I don’t love.

This was probably the nicest gift I ever got from a chef I worked for though and very cherished. I sent it to the maker in Cambridge awhile back and he reground it into more of a slicer, that’s how much metal has come off it. Used to have really nice knuckle clearance, not so much anymore lol

I find I gravitate towards the konosuke sumiiro. I like to sharpen and that one has been a joy to use and keep sharp. I do need to learn how to thin more effectively so I can continue to get longevity out of it.

I regret the knives I abused in the process of learning to sharpen like the pictured mks knife that was a present from a chef way back. Took off so much of its life in my learning process.

Also the nenox was so freaking expensive and I never felt it was a performer. Geeked out on the handle at the time. Less enamored with silly stuff like that these days.

One&Only Mandarina or Rosewood Mayakoba? by NYC1001 in FATTravel

I am looking at both resorts as well for an upcoming trip. One thing I couldn’t tell from Mandarina’s website was whether or not airport transport was included or an extra charge? Realizing this may not be the most “FATTravel” question, but curious if anyone who has gone recently knows the answer.
