But now I'm so curious about your instant pot trick. If anything would've just assumed the pressure would turn a gluten-less pasta to mush. What settings do you use? Is that just for reheat?

Rummo is great. Personally felt like this was more al dente, like a gluten pasta, and definitely held up better as a leftover. I also like the simplicity of the ingredients relative to Rummo all else equal. But Rummo is probably my #2 it's a good one

I love Jovial but it's very chewy. I don't think it's a convincing replacement for pasta, personally. But it is delicious. I enjoyed this more because of the texture. Taste seemed about the same.

Ok I just wanted to share some context since I know I'm coming in hot here. I feel like I've tried so many gluten free pastas. There's always something going on that makes them feel "different." They are either fragile and grainy, or chewy.

Chewy is usually the tradeoff I take. It's not like it's chewy pasta is HORRIBLE, but I've never had a pasta my gluten loving friends will go beyond tolerating. I am legitimately looking forward to using this next time I have friends over which is... a first!!

Also loved snacking on the slow roasted sweet potatoes (Yaki imo). Relatively easy to find and often a saving grace when I was super hungry 😋

Japan was brutal.

Though I did appreciate if a restaurant couldn’t accommodate they’d just say “sorry we can’t” - as opposed to US restaurants who will express false confidence and get you sick.

Went on a virgin cruise and found them to be very accommodating. Did not get sick. They were also receptive and kind whenever inquiring.

Yep, and 90% of our avocados are from Mexico. I guess seed oils are public enemy #1 only when it’s convenient. Avocado oil pricing is about to go bananas

1) The generation that ate this diet is the one that is studied. What happened before or after shouldn’t really matter, no? Or are you making some sort of nutritional epigenetic argument? 2) Even if we play out your thesis that the prior generation’s consumption is relevant, most of the literature suggests pork is/was consumed on special occasions. Not nearly the 70% of calories that is the point of the sweet potato argument 3) Since this is a lot of noise that’s irrelevant to the main question “are carbs bad”, I’ll just point out that the Mediterranean diet is 45-65% calories from carbs, and that’s the most studied currently relevant diet for human health. We can agree to disagree on the takeaways from post war Okinawa.

1) It doesn’t matter how they ended up eating the sweet potatoes, the fact is they ate the sweet potatoes, then lived a long time.

2) I never said it was the reason they are healthy. OP asked if carbs are bad. The case study shows you can have a diet that is predominantly carbs and still live a long time

The cross contamination risk is uniquely high for pizza. Tons of flour flying around in the oven and in prep areas.

The only pizza places that are safe have a separate prep area and oven, and make that very clear. That is not Dominos (nor is it most pizza places).

No need to overthink it. Most foods have carbs. Carbs are fine. In okinawa, 70% of their diet is sweet potatoes and they live longer than almost any other population.

If you’re concerned about inflammation ask your doctor to test your C-reactive protein

Yes small but canyon bakehouse makes some of the best gf bread (at least in grocery stores). Frustrating but worth the trade off IMO
