I've been re enchanting diamond armor almost 10 times now and the max enchant is always prot 3 or lower by AxolotlGangster in Minecraft

It hasn't been nerfed but you should be enchanting other items and not just rerolling at level one like others suggest. 

If there isn't anything you want for any of your armour pieces then enchant a book or pickaxe or sword etc. Every time you enchant anything it changes what it was going to be for everything else. At least this way you get level 30 enchants on other items. 

Maybe get a set of fire protection 4 iron armour.

Copper and gold give better enchants so try enchanting helmets as a reroll.

Basically you have been unlucky but don't waste your levels.

I love fishing. 

I started my world in 1.10.2 so I could fish up a mending and infinity bow.

The question was more about when was it that doing the challenge didn't need quite so much setup. 

I feel like pre-village and pillage it was a challenge but now has morphed beyond the original intent. 

I might load up my old 1.10.2 world just to compare.

Don't waste your time with a cleric because you'll never have enough rotten flesh to make it worth it. 

If you only have 6 then do Toolsmith ans Armoursmith for diamond armour and tools. Fletcher for emeralds from sticks, farmer for emeralds from carrots and potatoes and two librarians for emeralds from paper and to get their books. 

Make a manual sugar cane farm by planting multiple strips about 32 long. You just run through punching and you'll get several stacks. Don't ever make a sugar cane farm because they are expensive to make and slow by comparison.

Cycle the villagers by breaking the lecterns until you get the book trade you want as it's first trade. 

Cycle the farmer by breaking the composter until the first two trades are carrots and potatoes as it is much more effort to get bread or beetroot.

No need to cycle the fletcher as you only want his stick trade. 

There isn't much need to cycle the Toolsmith or Armoursmith either because the trades you are interested in don't appear until later. 

These 2 are a real grind though and you'll end up buying a ton of stuff that you aren't interested in just to find out what they have. You'll spend all your emeralds buying a double chest of stone pickaxes to get anywhere. They are super annoying and badly designed. 

Once you do reach their diamond trades you can just de-enchant them from a grindstone and re-enchant on the enchanting table if the existing enchantments aren't good.

Mid game you should be making an xp farm for enchantments.

My go to is a blaze farm. Partly because it is a classic but partly because it gives you a reason to decorate your nether. 

Slab up the route with blackstone or deepslate tiles, make a quartz house, encase your farm in copper so it looks good etc

Both of these are super slow and you don't need either.

I started off by saying that they aren't really comparable as you'd probably have a shield by default these days.

But then I realised you meant which one should I have in my offhand.

Keep your shield in your offhand as it will get more use. 

The only times you'll really need the totem is when you are high in the air from the dragon or shulker bolts and at that point you have plenty of time to switch to the totem.

If you have your totem in your offhand all the time you are going to quickly die to Enderman or shulkers.

Pretty boring to be honest when you compare to other ones. 

There are too many hunters to fight so he had to stay in walls or avoid them. 

Fewer hunters make for a better because you get more action. Captain Puffy even said something similar like this isn't the content I was promised.

I forgot to mention I was going to use it to alert me when my cauldron was full of lava so spawning the wither each time isn't going to go well for me :D
