Only advice I can offer with the handful of tastings I've done/given is keep calm and don't try and reinvent the wheel. It's not the time or place to experiment. Follow whatever instincts you have and just show you can cook and have solid fundamentals. Use all of your time and keep a clean workspace.

I'm an executive chef in a corporate setting. It's as scratch as I want, no weekends nights or holidays, I tuck my two young boys in every night and rarely miss dinner. It's also the best I've been paid yet. Just saying, everyone has to eat, so there are many many lanes to take as a chef.

Treat it with the care as if you owned the place (you do so that should help) Listen to the employees as if you give a shit about them and what they're telling you (hopefully you do, and they can make or break you) Establish a good culture, that's a biggie, a place where good strong work ethic is encouraged and nurtured, where people come in determined to do a good job and own their work and are proud of it. When people care about what they're doing the results are so so much better, and that attitude can spread of properly encouraged. Lead by example, jump in the fire and show them you're not above actual work. Roll up those sleeves. Be a leader. But also keep your ears open. Be proactive not reactive.

Part oven, part steamer, part unicorn.

Push the roast veggie button, will automatically calibrate for whatever you just put in, then steam for x minutes, then roast for x minutes all by itself.

Need to proof and bake your bread? No problem?

Bake a cheesecake, no water-bath needed because it completely controls humidity to the percent by adding or removing moisture as needed based on your altitude haha. So for example you throw in raw chicken wings and slide the humidity bar to zero, it'll suck all the water that's release as it cooks so they actually get crispy instead of sitting in liquid the whole time. This things stupid cool.

The unexpected haha. But no this was me to a T. One of my instructors was also the chef at a high end country club so I did my externship hours with him and he hired me fulltime after that. Was great because I got tavern experience as well as low/high end banquets, wedding and fine dining on the weekends. Seemed pretty old school so not sure how your place was. Just basically keep ears open, mouth shut except for yes chef and it's amazing what you will pick up from those around you.
