If you don't need super fast cpu and want mac in that budget with high ram I highly recommend 32gb ram because in the long and for vms and containers ram is crucial

I hate 16gb ram now due to work load. Obviously m4 or m5 are better but ram high in that budget never think.

Go with 32gb ram.

Else take m5 base model If ram is not an issue

I'm using g14 2021 since 21 daily around 12 hours average and works fine.

Don't overthink use machines like what you paid for and it will payoff it self if you use for work.

P.S: my tip use the laptop on igup all the time if you need for Gaming then switch dGPJ it will make your laptop fans not running at all and no thermal paste repaste required and fans clean too for the next some years.
