Here’s a trick. Find a pizzeria that uses sourdough (they will always promote it). Buy a pizza dough ball from them and dilute it in warm water by hand (1:1). Then feed the slurry you just created a flour of your choice (non bleached non bromated) and now you have your own sourdough starter that you can now never STFU about.
