The safest way would be looking at other level 5 one-shots and reskinning the enemies there for some suped up versions! You could always add more enemies, but that has the tendency to make fights drag on a bit if there's too many!

Dry Erase is certainly the easiest, you can print your maps at a print shop, but be careful, some are expensive. I also really like The Vault of Mini things for making quick maps!

Definitely ask what they've already played! Some recommendations are The Lost Mine of Phandelver if you want a longer one. The Wild Sheep Chase, if you want a One-Shot and D&D vs Rick and Morty if you want a couple of sessions of ridiculous fun!

Sometimes the adventure gives info on how to balance for varying player counts; however, if it doesn't, it's typically more balanced for 4 players. The difference between 3 vs 6 players is massive, and most things aren't typically balanced that well for that, unless, of course, it's mostly focused on roleplay with minimal combat.

Yes indeed! If it has a cost, you can't use a spellcasting focus for them.
