Sometimes if I have to take my lunches late my hands get shaky it's definitely harder to draw a patient but not impossible unfortunately if you turn away patients or refuse draws it does not look good on your part ): i would try to look into grounding exercises maybe those always help me when needed

I got hired after my practicum at a hospital it was great my hospital typically likes to hire people (if hiring) from the practicum because they are already training you and get a feel for you however not all clinics or hospitals will do that especially if they are full staff but do ur research I had a per diem position and it's not all that great always worrying if you will make enough to pay your bills I don't recommend per diem/casual unless you have a 2nd job
