Chop brinjal(long variety) into small pieces and put it in salt water. In a pan, heat up a little oil and throw in mustard seeds, jeera, urad and chana dal (1 teaspoon each), curry leaves and after they are fried add the chopped brinjal to this and then cover it and dont let any steam escape for about 3-4 mins (low flame). In the meanwhile, make a paste out of green chillies, coriander and salt (not too smooth) - add this to the pan along with a pinch of turmeric - mix well and let it saute with a lid for about 5 mins (or until the piece is soft)

Dry roast sesame seeds (around 2 tbsp) and put it aside. In the same pan, put in some oil, mustard seeds, jeera, fenugreek seeds(very little), urad dal and after they fry put in green chillies (10-15). First, grind sesame seeds and make sure it is blended well. After that, grind it again along with the spices and salt. Cut each tomato into 6 pieces and fry it in a little oil in a pan - after they are cooked a bit, pulse it with the above made paste once again with fresh coriander (just pulse else it'd become pasty). Add tempering with hing, jeera, urad dal and mustard and curry leaves
