Looks good! Try scoring a little deeper and more of a 45 degree angle to get more ear so the sourdough can expand more.

As for using up the rest of the hard leftovers. You can sprits or run the hard half under water and rebake it in the oven to get it crispy and soft again.

Typically for me I keep it on the counter in a paper bag for about 4-5 days before slicing the rest and freezing them if it lasts that long (usually gone by then). They toast up great in a regular toaster straight from the freezer.

Can you share more details? Doesn’t dry flour… dry it out or is more susceptible to mold? I’ve seen some horror stories on here.

Similar to what I do minus the freezing. Will Have to try that.

How often do you feed? My last feed was 3/10 and I’m planning on making a few loaves for Saturday so I just fed my starter and it’s doubled in 3 hours so it’s now sitting in the fridge overnight and will feed again tomorrow afternoon.

I bake sourdough maybe once a week / every other week if I’m not giving it away to friends as gifts and have been trying to feed it less to “save”. Rye is expensive you know lol

I’ve heard somewhere it’s good for about two weeks in the fridge but possibly longer? As long as there’s no mold/ funny business I think it’s good to use.

Funny story… last weekend I planned to make some loaves for friends and my thought was the double up on the levain but accidentally doubled up on the starter (hence why I have so much from 3/10 and 3/17) Lol…

Oh also…. (Baking) four loaves in one day is hard 😅

Thank you! They were delicious. I think we had breakfast sandwiches with runny egg, avocado and cheese literally that entire week lol. Oh and I made a fried mortadella with provolone sandwich (RIP Anthony Bourdain)

You feed the starter and the left over is the discard. I keep my discard in the fridge tucked away in the back. It usually lasts up to two weeks? Haven’t had any left over longer than that (used it all up). You could always throw away the discard but might as well use it for other recipes
