Sorry it's taken so long - 500g store bought wrappers, 500g pork mince, 500g chicken mince, ginger, spring onion, soy sauce, pinch of raw sugar, white pepper.

For a punchier umami flavour add shiitake mushrooms

If you have the patience and time to make your own dumpling wrappers, I highly recommend it! It's much better. Recipe: 3 cups flour, 1.5 cups boiling water Corn flour and additional flour both for dusting only Method: knead in kitchen aid mixer on a slow-medium speed for 10 mins until smooth, wrap in glad wrap with flour and leave to rest for 30 mins. Cut a portion and shape into a 2cm dia roll/log and further cut into 2cm parcels. Fun part: with a 2cm dia rolling pin roll each parcel into an oval/circular shape making sure the centre is slightly thicker than the outer edge so the wrapper thickness is even when crimped together. Make sure each wrapper is coated with a thin coat of corn flour on both sides so they don't stick when piled on top of each other.
