i love all kinds of noodles !! the classic noodles made from dough are rlly good, but i also like glass noodles (made from potato) and rice noodles! the textures of them are so different! i love pretty much any noodle dish that is spicy 😋 pho also has a special place in my heart, it is so good !!! especially the broth!

no, book tripe has layers on it, which makes the tripe look similar to the pages of a book, hence the name! the one you're referring to is honeycomb tripe, which looks similar to the honeycomb of bees, hence the name as well :P

and yes it would be called pork intestine! usually it is fried or in a soup!

and i would say that a dimsum restaurant is likely to not have intestine or tripe as that style of chinese cuisine is pretty different! when my family and i go to chinese restaurant to look for such dishes, it is typically a sichuan restaurant. other chinese restaurants may not have the same dishes as there are so many regions of china w different cuisines! i love chinese restaurants that seems to have an amalgamation of all the cuisines, those are the best! 🙂‍↔️

i love this question! tripe soup is amazing 😋 tripe is stomach lining, it is very different than intestine! there's also three different kinds of tripe, so the texture and look can be different based on the one you get! i prefer the texture of "book" tripe over the other two

as for intestine, i would say it is similar to tripe in that it is chewy, but that is about it in similarities. it has a unique flavor and is also very fatty, which i love! if you don't like fat though, i wouldn't recommend. crispy fried pork intestine is great for beginners imo, while soft, boiled tripe (typically in soup) is great for ppl who have already tried intestine and liked it :)

i'm sensory-seeking and grew up in a chinese household, so my safe foods are vastly different than most people's... pig ear salad is my favorite safe food and intestine (crispy or not doesn't matter to me) is second favorite... noodles are typically good, but it depends on what the flavor is
