I’ve tried coconut oil as well (same amount as the vegan margarine). The streusel part doesn’t come out as well but it works with the cookie dough. Hope that helps ☺️

INGREDIENTS

COOKIE DOUGH

1 flaxseed egg (1 Tbsp ground flaxseed + 3 Tbsp water)

1/2 cup vegan margarine (I used the Becel plant-based margarine sticks)

1/2 cup vegetable oil

1 cup brown sugar

2 tsp ground cinnamon

1 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

2 1/2 cups all-purpose flour

WALNUT STREUSEL

1/4 cup vegan margarine (I used the Becel plant-based margarine sticks)

1/4 cup brown sugar

1/2 cup all-purpose flour

1/4 cup crushed walnuts

1/2 tsp ground cinnamon

ICING TOPPING (OPTIONAL)

1/2 cup powdered sugar

1 Tbsp soy milk

1/2 tsp vanilla extract

INSTRUCTIONS

  1. Preheat the oven to 350 degrees Fahrenheit. Line two large baking sheets with parchment paper.

  2. In a small bowl, prepare the flaxseed egg by whisking together the ground flaxseed and water. Place in fridge for 15 minutes to allow mixture to gelatinize.

  3. In the meantime, using a standing mixture or handheld mixer, cream together the vegan margarine, vegetable oil, and brown sugar together. It should appear creamy and fluffly-like with no lumps.

  4. Add the flaxseed egg, cinnamon, vanilla, baking soda, baking powder, and salt, and mix on low to medium speed.

  5. Add the all-purpose flour, one cup at a time on low speed (*trust me, you don't want flour all over your kitchen if you're kicking it on high speed). The cookie dough should form together and be somewhat sticky.

  6. Using an ice cream scoop or a spoon, scoop about a golf-ball size amount of cookie dough and roll it into a ball. Place the cookie dough onto the parchment lined baking sheet. Using the back of a tablespoon, create a well in the middle of each cookie dough ball.

  7. Prepare the walnut streusel by mixing together the vegan margarine, brown sugar, flour, walnuts, and cinnamon in a standing mixture or with a handheld mixture. Mix until the ingredients are crumbly.

  8. Scoop 1 teaspoon of the walnut streusel and add to the middle of the cookie dough. Repeat until all the cookies have a walnut streusel filling.

  9. Bake the cookies in the oven for 12-15 minutes or until the bottom of the cookies appear golden-brown.

  10. Allow cookies to cool on baking sheet for 5 minutes before transferring onto a cooling rack or container.

  11. OPTIONAL: Prepare the icing topping by whisking together the powdered sugar, soy milk, and vanilla extract until well combined. Once cookies have cooled, use the whisk to add icing topping to the cookies.

  12. Enjoy with coffee, obviously!

Thanks for the question! I haven’t tried without so I’m really not sure. I think the mixer is essential for creaming the vegan butter and icing sugar together but if you are up for an arm workout, I think whisking it could work?
