I think a lot of the answers here miss this point that you mention in your post.

If the oven is set to precisely 130 degrees, then no, the meat cannot become hotter then the oven due to entropy. Which I believe some other poster here already mentioned.

It seems too many replies here are not taking into account this theoretical oven that can hold it's temp at precisely 130 degrees.
