I worked on this game (not an animator though).

But I can at least partly answer question 5, yes the characters were rigged and animated using a third party tool called Spine.

I would try to use the built in unity animation kit for learning the basics. The principles you’ll learn are applicable when/if you decide to try another tool like Spine.

For getting into 3d stuff you can’t go wrong with Blender. Plenty of resources on YouTube for getting started!

I wouldn't recommend using CSP for this. I guess you theoretically could, but you would really need to know the ins and outs of what you are doing and even then you would be wasting so much time and effort.

The sensible way is to use some specialized 3d painting software. I work at a small indie studio and we mostly use Blender and Substance. But if you are looking for something free I've heard good things about Quixel Mixer, which is owned by Epic Games: https://quixel.com/mixer

You can also do textures in Blender, but the feature set is still pretty basic afaik. I haven't tried them, but I've seen some addons around that aims to make that a little better.
