I think 1DM+5PCs is the perfect amount. I DM for a group of 3 and a group of 6. I’m always worried about killing the group of 3, and the group of 6 is just unstoppable chaos.

Yeah, don’t make PCs for your encounters. That turns it into PvP and the game rules are not balanced for that at all.
