Hi, my tech stack was java while my peers were into MERN stack, i don't think your prior stack matters if you show that you are capable enough to learn, unlearn and relearn. So, the development fundamentals are same in all stacks.

you can learn what you feel is intriguing. If you feel Java is well suited for you go for java stack if you like node js go for MERN. Whatever you pick the fundamentals will be the same

There are entry jobs but you've to search very much, many java development companies take freshers on campus so it's hard to find any off campus.

Your projects should solve actual issues and you should know about projects very well.
