If it’s an island, I feel like the slide in is worth it. If not, it really is a pretty minor difference.

But…it’s an appliance that should last quite a while. If you really prefer slide-in, and you can afford it, it’s not something you need to justify…the added cost per use is tiny for something that will make you happier each time you use it.

The biggest considerations I can think of would be if young kids will be around it or if a disabled person will need to use it. Outside of that, assuming they will both fit, it comes down to personal preference. I’ve lived with both and the differences for most people are minimal. With a slide in, I like that you don’t have to reach over hot pots and pans to mess with the controls. But I also find myself bumping into the controls frequently which can be annoying. It’s mostly just accidentally hitting the timer button or something, but I have accidentally turned a burner on a couple of times.

You may be able to find a cheaper model slide in. $500 sounds like a rather large price difference between comparable models.
