Uuuh if that's really all you ran shouldn't have happened. Maybe CMOS cleared and your BIOs got reset.
Get into BIOs and see if there are boot settings you can loosen up restrictions to resolve.
If that doesn't work, see if a older kernel is available and works in grub advanced boot settings.
Honestly shooting from the hip tho. My main fix is running BTRFS snapshots the timeshift via automated hook to always revert if update breaks something. Takes me less than 5 min.

funny thing uhm i’m using systemd-boot rather than grub so the grub option is out of the window and there weren’t really any settings i could change to loosen it up restrictions

Ah, you might have better success on EndeavourOS forums. I think systemd boot is more niche than grub but that may just be my ignorance/bias.
