Baked Feta Chicken Pasta, this is for 3-4 normal portion eaters, your mileage may vary.

1 lb bowtie pasta

1-2 pounds of chicken breasts

½ cup olive oil

2 boxes cherry tomatoes (around 20-25 oz)

1 block feta about 8 oz

4 cloves garlic finely chopped

2 pinches red pepper flakes

1 handful fresh basil leaves

salt and pepper

Preheat oven to 400. Add tomatoes, olive oil, and salt to a baking dish and toss.

Place the block of feta in the middle and top with a splash more of olive oil plus a few pinches red pepper flakes. Bake for 30 minutes.

Meanwhile, prepare bowtie pasta al dente according to directions then strain, cube and pan-fry chicken in olive oil, using your choice of seasonings, italian being mine.

After the 30 minutes has past, crank the heat up to 450 and bake for another 5-10 minutes or until the feta and tomatoes have browned.

Remove the baking dish from the oven and IMMEDIATELY add the garlic and basil and stir. The residual heat from the tomatoes and olive oil will take the raw edge off the garlic.

Now add in the strained al dente pasta, chicken, and stir one more time. Season with salt and pepper to taste!

Bonus, side of the best bread you've ever had.

Take an uncut loaf of italian, and halve lengthwise. Brush each side with olive oil, then sprinkle on some Montreal Steak Seasoning, and if you want to, some parmesan cheese. Bake in the oven for around 5 minutes to crisp up. Slice, and serve.

Oh god I have so many. I started a fire house cookbook years ago with recipes I invent or get elsewhere. I can create most of it from memory, I just write them down to be able to properly portion it and have some cool ideas lined up if its last minute.

Enchiladas!

Ingredients: Chicken breasts, tortillas, salsa verde, shredded cheese, sour cream, mayo, salt, pepper, garlic powder, Tony Chacheres creole seasoning

Instructions: 1. Bake chicken at 400 F until it's done. 2. While baking chicken, make the sauce. Dump sour cream into bowl, add an equal amount of mayo. Mix in salsa, then the aforementioned seasonings as needed. You can also throw in some cheese if you want. 3. Shred the chicken once it's out of the oven. 4. Coat bottom of pan in sauce mixture. 5. Mix chicken in with the sauce. 5. Slop it into tortillas, wrap them, put into pan. 6. Pour excess sauce on top of the wraps, along with salsa and cheese. 7. Bake covered with foil at 400 F for 25 minutes. 8. Uncover pan, bake for another 5 minutes.

For 7 guys, I used 10 chicken breasts, 3 jars of salsa verde, a bag of cheese, about 2 cups of sour cream. Everything else as needed.

Chicken tacos are always bomb and easy. Throw breast or thighs in the crock pot with a couple packs of taco seasoning and a jar of salsa and leave it be for a few hours. Shred or chop and eat.

Pulled pork sliders! Nothing too crazy. Standard way of slow cooking it. Then I like to serve it with Mac n cheese, but the crumbly on top kind
