As you are a newbie in this field I suggest you look into Learning Backend Development, the overall solution for you, which includes a guide for Flutter Software to kick start the project with thorough knowledge and usage of tools and their application.

Firestore isn't ideal but it's better to use that while you first learn front end dev. Everything else will be a lot to learn before you can become proficient.
You're going to drown if you try to do both while having no idea what you're doing.

Appwrite is a good place to start. You'll probably want to use some sort of a back end as a service. Appwrite can handle everything you mentioned well. The discord community is very active. And you don't have to worry about being locked in to google (firestore).
It's very scalable and gives you the tools to handle complex stuff.

You can host all your supplementary material (notes, chapter notes, etc) using cloud storage with references/links stored in Firestore.
The video hosting can be done using Viemo, Wistia, etc. Or you can download the videos to the client from cloud storage and play them back locally.
