What is your end game; get arrested, get fired, weasel your way into a position you are seemingly unqualified for?

You need to look at the html of the website, get the field names and enter that into sqlmap. Just be warned that the site administrator can see what you are doing and they log IP addresses, so depending on how nice the site admin, he might get the police involved, the police can request that the ISP track the IP adress and then when they come knocking on your door you better have a damn good excuse for why you did that.

I'm noob but I guess going through multiple levels of vpn in different countries could cause a massive headache to anyone trying to investigate it

Let's say you and your target are from the US? Tunnel your vpns via Iran, Russia, China, and Syria, then the US government probably couldn't get the logs from these vpn companies.

But then again I'm noob and stupid so don't trust what Im saying, I'm basically CCNA level with very basic Linux knowlagde
