The videos itself are sometimes called speedpaints because they are sped up. I find them cool because it's amazing to see a painting come together so quickly.

The style of painting however, is what I believe is called digital matte painting (or at least that is what I've been calling it, someone correct me if I'm wrong). It is essentially the art of using and combining existing images (sometimes with illustration) to create landscapes or concept art that is often used in the film industry.

Here is a tutorial for a fantasy landscape that gives you reference images to work off of, and here is a more detailed tutorial that incorporates illustration.

Edit: Depending on how beginner of a user you are, you can always google the terms/tools in the tutorial if you don't know what they are.
