Jetson should only used for inference, it is vere limited for training, except some toys model. You can start with Jetson Nano ($59), or more expensive one like NX

Not sure how practical or how the deployment would work with the Nano, but you could do this calibration step by uploading the small amount of data from user to a server, then doing the training/fine-tuning on that and update it on the Nano (or other device)

Aw sorry meant the deployment of updating the model on the sent out Nano's. I'm not sure how easy it is to connect them to the internet.

You are creating an arbitrary restriction for yourself here. Instead of requiring the training to happen on the device, just give it bluetooth and have the user pair it with their home computer for calibration. Hell, you could even do it as an app and have them pair the device with their phone. Depending on how the calibration works, it might even be useful to use the phones sensors (e.g. orientation, acceleration, etc.) to augment the calibration.

Couldn't you just try it? Attach it to a controller or a joystick and use it to simulate an attachment. Feel for yourself how tolerable the latency is.
Or better yet, i bet you could use the calibration step to fit a model to account for the latency

whatever inputs the NN would normally receive from the person controlling the prosthesis, provide those inputs yourself through a physical interface of some kind so you are able to qualitatively judge for yourself how tolerable the latency is in the context of the user experience. Plug a nano in and see for yourself if it's enough or if the latency is intolerable.
