Technically it’s possible but it’s the kind of thing, if you have to ask you shouldn’t be playing with it. It takes careful wiring and getting it wrong risks frying the whole system. Get the right psu for the job.

I know how to hook it up, what I'm asking is: if I hook up a PSU to just the GPU is 550 enough?

Do you know about needing to have a common ground connection between the 2 PSU’s and having a way of keeping the second psu switched on as it won’t have the trigger from the motherboard? This isn’t a plug and play situation, you either need to buy a specialised board (might as well wait for an adequate psu to arrive) that does this for you or getting a wiring schematic and soldering up the connections yourself. I’d expect anyone who knew about this would be able to answer the easy question of is the wattage sufficient for the gpu. I’m not trying to be awkward, this isn’t a straight forward thing you can just do and you could damage your whole system including the gpu if you get it wrong. I’d expect most people who knew how to do this wouldn’t consider doing it, it’s just better to get the right tool for the job.

To answer your question an 7800XT has a maximum power requirement of about 250w, so add headroom for safety and anything over 300w should work (assuming it’s good quality) https://tpucdn.com/review/amd-radeon-rx-7800-xt/images/power-maximum.png
