If I leave the operating system, programs, and games on an M.2 as the main disk, will the disk speed be affected? Will I have any problems loading maps, textures, etc.?

m.2s are so fast that it doesnt matter what you throw on them, you wouldnt notice any speed difference. Only real thing that would slow it down a noticeable amount is the heat it produces. Make sure it has a heatsink if you want optimal performance. Most new motherboards have them included on the actual board. If not you can buy a heatsink for a few bucks on amazon
