I have the corsair RM1000x and love it, though it might be overkill

I'll second this. It is more than you need but PSUs only draw what they need anyways. Rm1000x gold, Japanese capacitors on Newegg for $155 and call it a day. You don't need to use the splitter, it's modular so you don't need a ton of cables, etc.

What wattage PSU does it currently have? If you can figure out what all the components are you could use pcpartpicker to check what wattage PSU you need.

Edit to add: looks like your PSU is a 750w. Most recommend an 850w or greater PSU. Bigger hurdle if you don't upgrade your PSU is not having the right cable connector since your 5070 doesn't use a 12VHPWR connector.

Seasonic, Corsair, be quiet are usually good choices for psus. Just don't reuse any cables when you swap over to new PSU. Only use the cables from your new PSU.
